5 Reasons to Love Potatoes

5 Reasons to Love Potatoes

By Julieanna Hever, The Plant-Based Dietitian

Potatoes get a bad rap, but they are wonderful staple foods that provide a plethora of benefits. Here are five:

1. Longevity

You can store cooked potatoes for several days so batch cooking them in advance will save you cooking time throughout the week. Whether you're exclusively eating potatoes or simply enjoying them with a soup, stew, chili, salad, or other dish, it's great to always have them on hand and ready to eat.

2. Satiety

Potatoes have been scientifically found to be the most satisfying food.

3. Variety

There are so many types and varieties of potatoes and the distinctive flavors become more and more noticeable as your palate shifts.

4. Ubiquity

Potatoes are ubiquitous. You can find them at any store and order them at most restaurants where it would be difficult to sneak in butter, oil, or other ingredients without you noticing.

5. Healthy

Sweet potatoes make up a large percentage of the diet of traditional Okinawans, one of the longest-lived and healthiest populations in the world. They are surprisingly nutritious, full of potassium, magnesium, folate, vitamin C, fiber, and enough protein that, shockingly, potatoes have a better amino acid profile than lean beef.
