Review: Sweet Potato Parfait & Hearty Beet Salad

We had Vince Tucker, Health and Wellness Coach and Plant-Based Nutrition Educator, review two of our new menu items that will be making an appearance in February 2022.
He was given the Hearty Beet Salad with Organic Girl greens to add in, house-made oil-free Italian dressing, and the Sweet Potato Pie Parfait.

The Whole Harvest Hearty Beet Salad is a filling meal in itself. Per Whole Harvest’s recommendation, I added a handful of greens and a drizzle of dressing.
The palate pleasure begins with the contrasting textures of the crunchy shredded carrots, soft lentils, and chewy dried apricots, with a foundation of firm beets and the perfect amount of enhancing leafy greens. The tangy vinaigrette dressing and sweet dried apricots enhance the earthy flavors of the beets and lentils.
Magically, the added sweetness of the apricots in the Hearty Beet Salad curbed my craving for dessert.
However, I still, dutifully, partook of the Sweet Potato Pie Parfait.
This is a guilt-free breakfast item or treat that balances raisins, apples, and dates to provide a perfect tangy sweetness that delights the palate. The parfait is solidified with rolled and steel-cut oats, along with hearty sweet potatoes and pepita seeds, providing a pleasurable contrast of both crunchy and soft goodness.
In combination the Hearty Beet salad and the sweet potato pie parfait provide a superb balance of root vegetables, healthy starches, leafy greens, whole grains, legumes, and fruit, while providing healthy fats from seeds.
The Hearty Beet salad provides a rainbow of colors, ensuring a nutritionally-balanced plant-based meal. This salad and parfait combo provided a significant amount of all three macronutrients in the form of whole-food carbohydrates, plant-based protein, and healthy fats.
You can feel good consuming this meal because it is high in cancer-fighting antioxidants, nitrates, and folates for cardiovascular health, fiber for digestive health, healthy fats for the absorption of fat soluble vitamins, and various essential trace elements not found in processed and animal-based foods.
All in all I give this combo a 10!
